Where to eat it

What it is

Grilled rib (烤羊小排, kao yang xiaopai) is one big marinated rib, grilled and served on its own. The Chinese 羊 covers both goat and sheep, and the menu does not say which this is. Food bloggers describe it as very large, meaty and juicy, with a marinade that stops short of salty. It is an extra, not a meal.

How it is made

The rib is marinated, then grilled. Te Chang Goat Meat (德昌羊肉) does not publish its marinade or explain how it grills the meat.

How to eat it

Order it next to the shop's main goat dishes, such as goat soup, goat hot pot or thin noodles in goat fat (羊油麵線). Each customer may buy only one rib, and they often sell out before closing.

Around Taiwan

Kaohsiung
Te Chang says it is Gangshan's oldest goat shop, begun in 1944 as a market stall selling goat rice-noodle soup. Poor farmland made northern Kaohsiung goat country, with Gangshan its trading centre. The Taipei Times reported in 2018 that over 90 per cent of the goat served there is imported.
